2021 Meal Plan: Week 17

I’m late! But it’s for a good reason – life. Life is the good reason.

It’s been crazy here. Last week at school, J sprained his ankle so he’s been on crutches, terrorizing the house, and we’ve been waiting on him and arguing with him about the importance of rest. It’s been thrilling.

So, since I’m limited on time, here’s the meal plan for this week!

April 26: grilled T-bones, grilled foil packets with potatoes and onions, and a salad. Happy 7th Anniversary to us!

Beauty is in the mouth of the beholder.

April 27: Instant Pot cheesy beef taco pasta (we used ground turkey and this was DELICIOUS!). No veggie – we screwed up the grocery list.

April 28: lemon pepper chicken, lemon parsley pasta, and I’m not sure what veggie yet but probably just a salad, or maybe I’ll make some carrots.

April 29: dinner out to celebrate a birthday!

April 30: homemade pizza (J will make it – his are incredibly delicious!)

May 1: Instant Pot stuffed shells, baked Parmesan chicken, and a salad.

May 2: crispy sous vide chicken thighs, potatoes (not sure how I’ll make them), and salad.

So, keeping it simple because that is what works best. I’m loving our Friday tradition of homemade pizzas though. So yummy!
