2023 Meal Plan: Week 10

Happy Wednesday, friends! I’m a few days late with the meal plan, but I’ve been busy working on some stuff and decided it wouldn’t hurt to wait until Wednesday to share with you all. 🙂

Monday 3/6: Alex has a band concert, so the plan is to pull some beef stew from the freezer and serve it with some sourdough (loaf in the freezer).

Tuesday 3/7: I had cooked up two pork roasts as carnitas, shredded them up, and froze them, so we’ll pull one of those out (I think we got 6 packages total), have some yellow rice (we might use the leftover turmeric rice from the week before, if there’s any left), serve it with beans for Kalen and I, and a salad for Alex, and then I’ll make some tortillas.

Wednesday 3/8: Karen is coming over, so we’ll be ordering dinner out.

Thursday 3/9: pulling some chicken gnocchi soup from the freezer to serve with some more of the sourdough loaf.

Friday 3/10: homemade French bread pizzas (I’m going to try something new to us – cooking up a pound of ground beef and seasoning it with allspice instead of using sausage). If we have lettuce still, we’ll have this with salads.

Saturday 3/11: chicken fried chicken, mashed potatoes, and the last of the frozen garden green beans. 😦

Sunday 3/12: homemade lasagna, homemade garlic bread, and probably canned green beans for the adults, and peas for Alex.

A pretty simple week, as per usual, but no complaints here! The simplest weeks always seem to be the tastiest. I also have to bake sandwich bread this week, freeze some bananas, peel and freeze garlic cloves (two Costco bags-worth), chop and freeze onions (this is a time saver for future me), bake some cookies (the last box of fundraiser dough), make some hard boiled eggs in the Instant Pot for Kalen’s breakfasts (we do it for 7 minutes, using 1 cup of water for 12 eggs, and they come out perfectly without any green rings), and possibly make some chocolate pumpkin muffins for quick breakfasts/healthy snacks. We still have a few pieces of last week’s chocolate zucchini bread (which was a hit), so we might not need those until next week.
